For those times when you need a quick breakfast or a boost to your day here’s a quick and yummy smoothie that whips up in about 5 minutes. It’s got everything you need to help fight off cravings and leave you feeling full and satisfied along with a healthy amount of protein, good carbs, vitamin C and fiber (strawberries are a great source of vitamin C and fiber). For an extra anti-aging boost add 2 tablespoons of collagen protein to the recipe below (omit if you follow a vegan diet); collagen and vitamin C are a well known and well researched anti-aging combination.
Strawberry + Coconut + Chia Smoothie
Total time: 5 minutes
Serves: 1
– 8 ounces of cold filtered/purified water (almond or coconut milk also work well)
– 1 scoop of vanilla protein powder (use a vegan plant protein if you follow a vegan diet or if using whey powder be sure it’s free of rBGH, a synthetic growth hormone)
– 1 tablespoon of organic, unrefined, coconut oil
– 1 tablespoon of chia seeds
– 3 or 4 drops of liquid stevia to taste
– 1/2 cup fresh or frozen strawberries (preferably organic)
– 1/2 to 1 cup of ice
Place all ingredients in a blender* and blend until smooth. If you’ve got some extra time and aren’t on the verge of having a major snack attack, leave the smoothie in the refrigerator for about an hour to allow the chia seeds to thicken up the drink. I find it’s a little more filling and satisfying this way. Enjoy!
* Any of the high powered blenders work well. My personal favorite is the VitaMix. I’ve had mine for almost 10 years; I use it almost daily and it works just as good as the day I bought it!
