SPAGHETTI SQUASH WITH CINNAMON AND RAISINS
Prep Time: 10 min (plus 30-40 min to cook the squash)
Makes about 4 servings
INGREDIENTS
- 4 cups of cooked spaghetti squash (cook and shred into strands on weekend to use during the week)
- 4 tablespoons coconut oil or grass-fed butter
- 2 teaspoons cinnamon (I love a strong cinnamon flavor so I usually add more)
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves (optional)
- 1/2 cup raisins or chopped dried cranberries
- 1/2 cup chopped toasted walnuts or pecans (optional)
DIRECTIONS
- Melt coconut oil or butter in a large skillet.
- Add cooked spaghetti squash, raisins, cinnamon, ginger and cloves. Mix thoroughly and heat until warmed through.
- Sprinkle with chopped nuts; serve warm.
