GARLIC + PARMESAN SWISS CHARD

Makes about 4 serving
INGREDIENTS
- 2 bunches of Swiss chard (preferably organic)
- 2 tablespoons olive oil
- 2 cloves fresh garlic (chopped or pressed in a garlic press)
- 1 can garbanzo beans (or any white bean), drained
- Fresh grated Parmesan cheese
- Sea salt and fresh ground pepper to taste
- Juice of half of a lemon
DIRECTIONS
- Bring a large pot of water to a boil.
- Break apart the Swiss chard and wash thoroughly. Cut Swiss chard greens from the spine/stem and cut into ribbons.
- Put the Swiss chard greens into the boiling water. Boil for no longer than a minute, just until it wilts.
- Immediately remove the Swiss chard from the boiling water and place into an ice bath to stop the cooking process.
- Drain the ice water and place the Swiss chard into a bowl lined with paper towels to remove excess water.
- Heat oil in a saute pan. Add garlic and cook just until it begins to sizzle.
- Add the beans and cook until heated through, approximately 5 minutes.
- Add the Swiss chard and heat through but do not cook for an extended period of time (this will keep most of the vitamins and minerals intact).
- Just before serving sprinkle with lemon juice and Parmesan cheese; serve warm.
