Peaches and Cream Smoothie

I realized most of my posts lately have been smoothie recipes but sometimes you just need something filling, refreshing and healthy when it’s too hot to cook or you’re looking for a healthy post-workout refueling. The motivation for this recipe came from the peaches that had been sitting in the fridge for a few days.

I ended up using 2 peaches (about 1 cup of cut up pieces) for this recipe then cutting up and freezing the rest to use later in a great vegan mango-peach “nice cream” recipe. For this smoothie recipe I was looking for a quick post-workout “dinner” since it was already late when I got home from the gym and a protein smoothie is always a great meal substitution when you don’t have time (or interest) to cook something

If you want an additional health boost you can add a packet of powdered probiotic. I do this regularly because I find my digestion is so much better when I’m feeding the good bacteria in my body. It seems like every time I turn on the news these days or do some research on current health topics on the internet there’s a new scientific report showing the importance of good gut health to our immune system and overall wellness. Adding a little probiotic packet or a half cup of no sugar greek yogurt to your smoothie on a regular basis will give your digestive and immune system a little boost, something most of us could use. PEACHES AND CREAM PROTEIN SMOOTHIE

Prep Time: 10 min

Makes 2 servings

INGREDIENTS

  • 2  cups of almond milk, coconut milk or milk of choice
  • 1 cup frozen or fresh or frozen peaches (frozen work best)
  • 2 scoops of vanilla protein powder
  • 2 tablespoons of ground flax seeds
  • 2 tablespoons coconut oil
  • 1 tsp cinnamon (optional)
  • 5-6 drops of liquid stevia (more or less depending on how sweet you like your smoothie)
  • 1 cup of ice cubes or crushed ice
  • extra water as needed if the smoothie is too thick as you’re blending

DIRECTIONS

Place all ingredients in a high-speed blender and blend until smooth. Pour into 2 large glasses, garnish with a peach slice and enjoy.

If you aren’t sharing and you don’t want to drink it all at one time (but I think you’ll want to) you can pour half of the smoothie mixture into a mason jar, leaving about an inch of space at the top before screwing on the lid, and place in the freezer to thaw and drink later.
