This is the easiest recipe ever! It takes just a few few minutes to put together and is a perfect summer lunch or dinner salad. You can add beans or chicken if you prefer a heartier, higher protein salad. The recipe below serves two but it can easily be doubled or tripled to serve a group. Enjoy!
Corn Salad
Serves 2
2 cups of mixed greens
2 cups fresh corn, raw, cooked or grilled
1 small cucumber, chopped
1 teaspoon honey (for vegan, use maple syrup)
Juice of 1 lemon
2 tablespoons extra-virgin olive oil
Sea salt, to taste
ASSEMBLE THE SALAD: Add all the ingredients to a large bowl and mix well.
