Gluten-Free + Dairy-Free Cranberry Apple Crisp

Easy and healthy for brunch or dessert

THIS SIMPLE DISH IS SURE TO BE A HIT!

This crisp is a simple healthy alternative to typical dessert or brunch dishes. It has much less sugar than most desserts and uses gluten free granola for the crumble topping. Once you get the apples and pears peeled and cut up the rest of the recipe goes together in about 5 minutes.

Whether you’re avoiding gluten and dairy for health reasons or just trying to make cleaner, healthier food choices, this simple, easy to make dessert will definitely take care of any sweet tooth without going overboard on the sugar. You’ll be the star of any occasion if you make an entrance with this heart warming dessert!

GLUTEN-FREE + DAIRY-FREE CRANBERRY APPLE CRISP

Bake Time: 40-50 min at 325F

Makes about 8 servings

 

INGREDIENTS

  • 4 Bosc pears
  • 3 pounds apples, any type (about 8 small apples)
  • Juice of 1 lemon
  • 2 tablespoons turbinado sugar (any granulated sugar will work but turbinado has a light caramel flavor)
  • 2 tablespoons light brown sugar
  • 1/4 cup ground flax
  • 2 tablespoons cinnamon
  • 2 tablespoons ground flax seeds
  • 1 tablespoon organic, gluten-free cornstarch
  • 1 bag of gluten-free granola, any flavor, 12 ounces (I like Udi’s or Purely Elizabeth)
  • 1 cup fresh cranberries or 1/2 cup dried cranberries or raisins (optional)
  • 1/2 cup chopped pecans or walnuts (optional)

DIRECTIONS

  • Peel and core apples and pears; chop into similar size pieces and place in a large bowl
  • Sprinkle lemon juice on apples and pears in the bowl as you’re peeling and chopping the remaining fruit, this will keep the already chopped fruit from browning
  • After all apples and pears are peeled and cubed drain the lemon juice and any liquid from the bowl
  • Sprinkle cinnamon, sugars and cornstarch over the fruit and thoroughly combine all ingredients until fruit is coated
  • Place the fruit mixture into a 9×13 baking dish and spread out evenly
  • Sprinkle the cranberries or raisins over the apples (if using)
  • Sprinkle the ground flax over the fruit and then pour the entire bag of granola in an even layer over the top
  • Sprinkle the nuts over the granola layer (depending on the granola you use there may already be nuts in the granola so you don’t need to add the extra nuts if you prefer not to)
  • Cover with foil; bake at 325 for about 35-40 minutes; remove foil and bake 5-10 more minutes; serve warm.

* Note: Add a dollop of coconut whipped cream or non-dairy whipped topping sprinkled with a little cinnamon for an extra special treat.
