Garlic and Parmesan Swiss Chard and Chickpeas

GARLIC + PARMESAN SWISS CHARD

Prep Time: 20 min

Makes about 4 serving

INGREDIENTS

  • 2 bunches of Swiss chard (preferably organic)
  • 2 tablespoons olive oil
  • 2 cloves fresh garlic (chopped or pressed in a garlic press)
  • 1 can garbanzo beans (or any white bean), drained
  • Fresh grated Parmesan cheese
  • Sea salt and fresh ground pepper to taste
  • Juice of half of a lemon

DIRECTIONS

  • Bring a large pot of water to a boil.
  • Break apart the Swiss chard and wash thoroughly. Cut Swiss chard greens from the spine/stem and cut into ribbons.
  • Put the Swiss chard greens into the boiling water. Boil for no longer than a minute, just until it wilts.
  • Immediately remove the Swiss chard from the boiling water and place into an ice bath to stop the cooking process.
  • Drain the ice water and place the Swiss chard into a bowl lined with paper towels to remove excess water.
  • Heat oil in a saute pan. Add garlic and cook just until it begins to sizzle.
  • Add the beans and cook until heated through, approximately 5 minutes.
  • Add the Swiss chard and heat through but do not cook for an extended period of time (this will keep most of the vitamins and minerals intact).
  • Just before serving sprinkle with lemon juice and Parmesan cheese; serve warm.
